Mom and I have instituted a “Supper Club” once a week. She has a week-day off, so she gets the ingredients and when I get off of work, I go over and we cook and play a game (Canasta or Rummikub, so far). Then we package up our left-overs for lunches and plan our next week’s meal.
We’ve done Taco Pie, Li’l Cheddar Meatloaves, and this week was Taco Stuffed Shells. Next week – we’re thinking Chicken Bundles. All comfort foods. Honestly, neither of us are fancy, experienced cooks.. I’m more of a baker – but it’s been fun – and filling!

A quick favorite go-to is grilled cheese and tomato soup. Last week I made me a pot of red beans and rice. In the next week or two I’m looking forward to jambalaya, depending how much leftovers I have from Memorial Day grilling. You got me thinking about making Roasted Greek Chicken and Potatoes In Lemon-Oregano Vinaigrette in a couple of weeks. Or if the weather holds out, maybe some jerk chicken skewers on the grill with green rice.
Any form of Gumbo or Jambalya. Arroz con Pollo. I have no Latino blood in me but I spent 2 1/2 years in Key West, while in the Navy, most of the time with a native Conch woman. 53 years later I can still remember her food.
My mom likes to make the Crescent Chicken Squares that you referred to as bundles. As long as she leaves the onions out, I love them!

I don’t have a favorite comfort food but Rummikube is one of out favorite games.
Grilled cheese sandwiches are a favorite, I always put jalapenos in mine, or at the very least put a squirt of sriacha in the middle before grilling, gives it that little kick!
