  1. same as chicken egg – but one hell of an omelet !! only ever had it scrambled to be able to save the shell.

  2. I hear that making a meringue using ostrich egg is better because the egg white whips up and holds air much better than chicken egg whites.

  3. We had guests from Australia visit us a little while back. Ended up arranging with the chef at the lodge to cook up an ostrich egg with breakfast (again scrambled – to save the shell. who’s going to manage to eat a yoke that’s 20x bigger than a normal chicken eggs in any case?)
    Had a bunch of upset patrons after that because they also wanted one… but it was a breakfast they would never forget!
